Joe's Favorite Recipes Page

I have designed this page to share some of my wifes best recipes with the world.  These recipes may be similar to others that you have seen but with my wife's best touch.

Skillet Herb Chicken

Ingredients: 1 chicken cut into 8 pieces, 1 large onion sliced into rings, 1 half green pepper sliced into stips, 2 Tablespoons of fresh chopped basil (or half teaspoon dried), 2 Tablespoons chopped fresh Thyme (or half teaspoon dried), 3 Tablespoons chopped fresh parsley (or 1 teaspoon dried), 1 Can condensed cream of mushroom soup, 1 can of whole milk, 2 Tablespoons olive oil, 1/4 cup flour.

Directions:  Sprinkle salt and pepper over chicken pieces,and lightly dredge in flour.  Heat olive oil over med high heat in large skillet.  Brown chicken in skillet on both sides.  Turn heat to low, spread onion and peppers over chicken along with herbs.  Spoon soup over chicken and pour milk over all.  Turn heat back up and bring to a boil.  Simmer on low for 1 hour turning chicken half way through.  Serve over noodles or rice or a baked potato.

Note: You may prefer to use cream, half and half or skip milk instead of whole milk.

Feel free to add a few fresh mushrooms to this recipe.
